Year 11 Hospitality and Catering students attend a Fish master class from Julie and Neil of Waitrose.  

In preparation for their January mock examination Year 11 students worked alongside two professionals from the Waitrose store in Stroud.

During the master class student’s;  

  • increased their knowledge of the nutritional value of fish in the diet.
  • considered what to look for when buying fresh fish.
  • looked at safe storage and methods of cooking which retain maximum nutritional value.  

 

Each student prepared, gutted and filleted a mackerel successfully. The lesson culminated with the students revising safe grilling of food and grilled mackerel fillets were served with herby butter.
